From nostalgic recipes to twists on classics, Suzie’s Diner hits the spot

By EMILY VASSAR - Telegraph Staff | Oct 3, 2020

New England has a love affair with diners, and there’s no wondering why. Evoking memories of times seemingly less daunting in comparison to the struggles of our current political and social landscapes, they bring us a sense of comfort and nostalgia. Even those of us who did the bulk of our growing up after 1979 can appreciate the charm that these small businesses provide. Our parents and grandparents can likely tell wonderful stories of grabbing breakfast, lunch, and sometimes dinner at a diner with friends or family. They gathered and met for meals and coffee, milkshakes, fountain soda and more. Whether on a date, grabbing breakfast before or after a hunting trip or delivering the morning paper, lunch after Sunday services or a simple but wholesome dinner with an old friend, the local diner gave them a comfortable seat at the bar or in a booth, and a delicious, homemade meal.

Every diner is a little different, and boasts their own recipes and twists on classics, but all of the ones that succeed today do so because they make good food, serve it with a smile, and make every guest feel welcomed and valued- because they are. That is what diners provided in the Baby Boomers’ generation, and it’s what they continue to provide for all of us today. There is something so special about a stack of homemade pancakes, a burger or a steak fresh from the grill; something magical happens when a Shirley Temple or a piping-hot cup of coffee is set down in front of us; we can’t help but sit back and smile when a slice of pie or cake made that morning is brought to us by a friendly face.

Suzie’s Diner has been opening their doors to regulars and newcomers alike since 1999. It is the kind of diner that brings back memories for some and helps make new memories for all. Every dish is made fresh to order, and is as delicious-looking as it is mouthwateringly tasty. Opening bright and early at 6:00 AM, Suzie’s serves breakfast and lunch seven days a week, and stays open until 7:00 PM on Thursdays and Fridays in order to serve dinner.

The breakfast menu might seem somewhat small in comparison to those at other diners, but what it may lack in quantity, it makes up for in quality and comfort. All egg plates are served with homefries and toast, and come to you piping hot, fresh off of the flat top. The Hungry Man’s Breakfast boasts heaping portions of all of the essentials: three eggs any way you want them, two pancakes, two sausage links, and two slices of bacon. Steak Tips and Eggs is a must for anyone with an appetite for quality red meat; eight ounces of garlic-pepper marinated tips are paired with three eggs of your choosing. Hash and Eggs is simple but savory and filling: two eggs, any style, are accompanied by crispy corned beef hash- make it extra crispy for me. Ham and Eggs aren’t just for Suess rhymes, and at Suzie’s, they’re oh-so-fine. Order this dish, and you’ll get a prime grilled Virginia ham steak with two eggs. The House Special is a delightful combination of two eggs and your choice of three slices of bacon or sausage links. Want more meat? Suzie’s has it. Kielbasa and Eggs or Steak and Eggs (featuring an eight ounce grilled sirloin) round out the egg plate options.

The griddle at Suzie’s stays busy with some amazing opportunities in pancakes and French toast. Classic Buttermilk Pancakes are served in a pair, and you can add to or top them with chocolate chips, blueberries, strawberries or bananas for two dollars each. Cinnamon Bun Pancakes feature swirls of cinnamon and sugar and are topped with vanilla icing. You may not even need syrup! Banana Nut Pancakes are wholesome and divine with sliced bananas and chopped walnuts added to the buttermilk mix. Classic French Toast is thick cut and dipped in their cinnamon and vanilla batter to create the iconic grilled breakfast delight. Cinnamon Bun French Toast, much like its pancake counterpart, delivers the sweetness and the delectableness. To top off this section of the menu, a decadent and super sweet meal is created, called Caramel Apple Pecan French Toast. This whopping plate of French toast is topped with warm apple pie filling, candied pecans, caramel sauce, and whipped cream.

Breakfast sandwiches and wraps are a dependable and delicious way to start any day. A classic Egg Sandwich at Suzie’s consists of one egg over-hard with your choice of bacon, sausage, or ham; add cheese and choose toast or an English muffin. An Egg and Cheese Burrito is a perfect on-the-go morning snack to tide you over, with two eggs, home fries and cheese wrapped up in a grilled tortilla; add bacon or sausage (or both!) for two dollars each. The Western Sandwich might be best enjoyed sitting down, consisting of a two-egg ham, pepper, and onion omelet on your choice of toast.

Speaking of omelets, Suzie’s has plenty. Each one consists of three Grade AA large eggs, and is served with home fries and toast. Cheese choices are American, Swiss, Cheddar, Pepper Jack, Feta and Mozzarella. The Veggie Omelet is a savory mix of peppers, onions, tomatoes and mushrooms. A Western Omelet, crucial to any breakfast menu, is made with chopped ham, peppers, and onions. The Meat Lover’s Omelet is a hearty melody of chopped ham, bacon and sausage. A Reuben Omelet is to breakfast what a Reuben Sandwich is to lunch, and that is to say, truly a real treat: grilled Pastrami, sauerkraut, thousand island dressing and Swiss cheese make this omelet something special. A Steak Bomb Omelet is a flavor bomb, packed with grilled cheese steak, peppers, onions, and sauteed mushrooms. Last but not least, the options are almost endless with the ability to build your own omelet starting at $5.99.

Benedicts are a breakfast favorite for many, and Suzie’s has an array of them to please any enthusiast. For those not familiar, eggs benedict, or “Bennies”, as us connoisseurs refer to them, are made by situating two poached, or “dropped”, eggs each on an English muffin half and typically a protein, then dousing them in what is a slightly salty, heavenly sauce of hollandaise. Suzie’s serves them with home fries or beans. A Classic Benedict starts things off here, as is customary, with two poached eggs on grilled English muffin halves and Canadian bacon. The California Benedict puts a West Coast spin on things with fresh, sliced avocado and tomato. The Irish Benedict, a classic in its own right, uses crispy corned beef hash, while the Sausage Benedict uses grilled sausage patties.

Sides are essential in the breakfast diner, and if you don’t order any, you might be missing out. At Suzie’s, choose from grilled muffins, bowls of oatmeal and cups of fruit, side plates of hash, homefries, baked beans, and all of the meat- and don’t forget the extra toast (white, rye, raisin, sourdough, plus bagels and English muffins)!

Suzie’s lunch and dinner menu is diverse, and requires an appetite. Start your meal with one of six appetizers, perfect for sharing and dipping. Dependable Mozzarella Sticks are served with marinara sauce, and zippy Buffalo Mozzarella Sticks come with ranch. Philly Cheese Steak Egg Rolls are crispy on the outside and delightfully savory on the inside. Onion Rings are battered and fried to perfection, and Fried Cheese Balls are a perfect pop of flavor.

If something lighter is what you prefer for a meal, soups and salads might be the ticket. Garden and Caesar salads can be upgraded with chicken for just an additional $3.00, and a Chef’s Salad is a hearty combination of tomato, red onion, cucumber, green pepper, hard boiled egg, oven roasted turkey and black forest ham on a bed of lettuce. A chowder and soup are featured each day; some favorites have been clam chowder, chili, Italian soup, corn chowder, cheddar broccoli soup, and many more.

A diner without burgers is no diner at all, and Suzie’s delivers. Served with French fries and a pickle, or with onion rings or sweet potato fries for just two additional dollars, every burger is made from six ounces of Certified Angus beef cooked to your preferred center temp. The Applewood Bacon Cheese Burger is topped off with bacon, lettuce, tomato, and the cheese of your choice. A classic Patty Melt, side of extra napkins suggested, is served between buttered, grilled rye bread with Swiss cheese, sauteed onions, and Thousand Island Dressing. Several more options are available.

Sandwiches at Suzie’s are so robust that you might need to throw in the towel half way through and ask for a doggy bag. Kelly’s Crispy Chicken Sandwich is a divine creation: coated in a custom blend of spices and deep fried to a perfect golden crispiness, it is topped with bacon, lettuce, tomatoes, dill pickles, and a cheese of your choice- though they highly recommend Pepper Jack- and is finally drizzled with a “secret chicken sauce”. A Pastrami Melt is a high contender, featuring grilled pastrami and melted cheese piled high on a brioche bun. The Chicken Bacon Ranch is a lighter option, but not lighter on flavor: Suzie’s fills a tortilla with grilled chicken, bacon, melted cheese, lettuce, tomato, and ranch dressing. Be sure to give this whole section of the menu your consideration.

Entrees of rich proteins and plates of seafood bring Suzie’s menu to a close, with items like Chicken Parmesan, Steak Tips, Liver and Onions, Fried or Baked Haddock, and Jumbo Fried Shrimp.

With their wholesome meals, amazing prices, and friendly staff, you simply cannot go wrong here. Whether you are a Hudson resident, are passing through, or find yourself hankering for a home cooked meal from a couple towns over, Suzie’s Diner feels like home, serves meals that taste like home, and welcomes every patron as if they are coming home.
