Wine pairing dinner Monday at bluAqua

AMHERST – Chef Chris Noble has prepared a special wine pairing dinner at bluAqua, 292 NH Route 101 (Salzberg Square), that will begin at 6:30 p.m. Monday.

There will also be live piano music for the dinner event.

The planned menu and pairings is as follows:

n Champagne and Cheese Social in the bar.

n Course One – Verde Sole Pinot Grigio with lobster, shrimp, scallop and heirloom tomato lettuce wraps.

n Course Two – Verde Sole Unoaked Chardonnay oyster, faux caviar, New Hampshire corn bisque.

n Course Three – Verde Sole Petit Sirah with sous vide duck roulade, foie gras butter, smoked pistachio French toast.

n Course Four – Verde Sole Zinfandel with lamb rib chop, Waygu short rib, corn succotash.

n Dessert – secret elixir cocktail with trio of baked brie en crote, bacon and chile dark chocolate truffle, whiskey bread pudding.

“Next up, I am in the planning stages to either do a weekly, biweekly or one-time game dinner,” Forrester said. “We’re still trying to gauge the interest. Chef Chris does amazing things with so many different game animals, I feel like it would be another thing to set us apart,” he said.
