Freekeh: A new way to enjoy wheat on the side

Freekeh, which means “to rub” in Arabic, is 2,000-year-old process born from a potential tragedy. When a Middle Eastern village was attacked and their crop of young green wheat was set ablaze, instead of writing it off, the villagers rubbed off the chaff and discovered a new way to enjoy wheat.

Freekeh roasted green wheat has a terrific chewy consistency when cooked, and is great as a standalone dish, a side, or a platform for protein. The cook time says 20-25 minutes, but I was happy with the texture and doneness at half that time. I enjoyed mine topped with shrimp, and little else. The tamari version (tamari is like soy sauce, but made with more soybeans and little to no wheat, unlike soy sauce) was flavorful enough on its own, with just the right amount of saltiness for me. The rosemary sage was full of rich, herby flavor that reminded me of holiday meals. There’s also an original variety for you to experiment with your own preferred flavor combinations.

I ate mine as a hot dinner, but I could see it used as a cold tabouleh style dish, in soups or as a hearty salad.
